thanks to my friend’s (Janice) encouragement I have been able to master crêpes! they really are easy! two huge tips: 1. make sure the pan is hot on medium-high heat 2. only use a 1/4 cup of batter and swirl around on the bottom of the pan!

makes 18, 9″ crêpes
ingredients:
• 1.5 cups flour
• 3 eggs
• 3/4 cup milk
• 3/4 cup water
• 3/8 tsp. salt
• 3 tbl. melted butter
steps:
1. mix all the ingredients together with a whisk until all the lumps disappear
2. heat a 9″ non-stick skillet hot on medium-high heat*
3. use 1/4 cup to scoop the batter into the pan
4. pour batter into the pan and swirl until the bottom is coated
5. cook until bubbles are gone and the top looks “dry”
6. check to see if bottom is lightly brown, if it is, flip it
7. cook other side to desired color (once the other side is lightly browned it is really cooked all the way through)
8. place cooked crêpe in a pan and cover with a moist paper towel place in warm oven (lowest setting that your oven will go) until all the remaining crêpes are cooked and ready to serve
(important to keep paper towel moist or crêpes will dry out)*
top as desired, sweet or savory and enjoy!
